Recipe Pairing:

  • Dish: Parmesan risotto (add lemon zest or herbs for brightness)

  • Wine: Dark Rock Sauvignon Blanc

  • Why it works: The wine’s crisp acidity cuts the richness, while citrus and crushed oyster shell notes mirror the dish’s umami.

Parmesan Risotto Recipe:

  • 1 cup Arborio rice

  • 3 cups warm chicken or veggie stock

  • 1 small shallot, finely chopped

  • 2 tbsp butter

  • 1/2 cup grated Parmesan

  • Salt & pepper to taste

  1. Sauté shallot in 1 tbsp butter until soft.

  2. Add rice, stir to coat, and toast for 1–2 minutes.

  3. Add stock gradually, stirring constantly until absorbed and creamy (about 20 minutes).

  4. Stir in remaining butter and Parmesan. Season to taste.

Serve hot with a chilled glass of Dark Rock Sauvignon Blanc.
